Hi there! How are you doing today?
It is Tuesday, so we still have a long week ahead. I know everyone loves weekend, but there is no weekend without weekdays. So, let's do something to cheer up our weekdays.
I'm thinking of food, what about you? If you are empty in mind about today's dinner and you are an Asian, you shouldn't leave my post right now. The dish I'm going to introduce to you is called " Xôi tứ bảo", a very typical Vietnamese dish.
Here are ingredients you need for four-people portion.

  1. Sticky rice 300 gram
  2. Ground pork 100 gram
  3. Big carrot 1
  4. Onion 1/2
  5. Green onion 2
  6. Black pepper
  7. Corn starch 
  8. Egg 2 (or 4 if you want each person gets one egg)
  9. Salt
  10. Soy Sauce 
  11. Some water ready. 
  12. Cooking oil.
  13. Wrap. 
Now, we are ready to make "Xôi tứ bảo", which means cooked sticky rice covered 4 stuffings.
  1. First, we need to soak the sticky rice in water for 4-6 hours. This rice is different from other kinds of rice, so to make it soft, you need to soak it for that amount of time. And then, you can use cooker to cook the sticky rice or normal pot. Note that this is is sticky rice, so the amount of water should be enough, not over to cover the surface of the rice. If not, the rice will be too soft to shape. 
  2. Cut carrot and onion in small cubes ( 0.2 inches each side). Chop green onion small.
  3. Boil eggs and cut each egg into four pieces ( you can cut as my direction or whatever you like. This step depends on how much egg you want per serving) 
  4. Marinate ground pork with soy sauce, salt and black pepper. 
  5. Before start making the stuffing, mix three corn tablespoon of starch with six tablespoon of water.
  6. Let's cook " tứ bảo", the inside mixture.  First, the pot and oil need to be heated, then you  gradually stir fry the ground pork to medium, add onion and carrot at the same time. When every ingredient looks ready, add the corn starch mixture into the pot, slowly stir the mixture until the final mixture looks sticky. 
  7. Now, take our the wrap and prepare for your final products. Cut the plastic wrap into 4x4-inches square. Place rice as a thick layer on the wrap, and add the mixture on top of rice. After that shape it as you want. I love the original shape, a sphere. Note: Try to shape it tightly, so the rice-cover-layer won't brake, and the inside mixture won't be leaked out when you eat. 
Now,  you can enjoy your your delicious dish.
